  • 1 organic leek, sliced

  • 1 pint cherry tomatoes

  • Salt & pepper to taste

Instructions:
Preheat your oven to 400°F.

Instructions:

    Strawberry Dressing:

  • 1 cup sliced strawberries

  • ¼ cup balsamic vinegar

  • 2 tablespoons water

  • 1 tablespoon minced shallot

  • 1 teaspoon Dijon mustard

  • 1 teaspoon honey

  • ½ teaspoon salt

  • ½ teaspoon black pepper

  • ½ cup olive oil

Instructions:

  1. Grill or pan-sear chicken breasts until fully cooked. Let cool slightly, then slice.

  2. Make the Dressing – In a blender, add sliced strawberries, balsamic vinegar, water, shallots, mustard, honey, salt, and pepper. Blend on high speed until smooth, about 10 seconds.
