Hearty Vegetable Stew
This hearty vegetable stew not only showcases the fresh, organic produce from A.R. Teal's but also provides a nourishing and comforting winter meal.
Ingredients:
2 tablespoons Séka Hills California Extra Virgin Olive Oil
1 large Organic Yellow Onion, diced
2 cloves garlic, minced
2 Organic Carrots, peeled and chopped
2 stalks Organic Celery, chopped
1 Organic Zucchini, chopped
1 Organic Red Bell Pepper, seeded and chopped
1 cup Organic Romanesco florets
2 Organic Red Potatoes, diced
1 cup Organic Butternut Squash, peeled and cubed
1 can (14.5 ounces) diced tomatoes
4 cups vegetable broth
1 teaspoon dried thyme
1 teaspoon dried rosemary
1 teaspoon dried sage
1 teaspoon garlic powder
1 teaspoon onion powder
A pinch of red pepper flakes, if desired
Salt and freshly ground black pepper to taste
1 bunch Organic Lacinato Kale, stems removed and leaves chopped
1 tablespoon fresh lemon juice
Instructions:
In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
Stir in the minced garlic, cooking for an additional minute until fragrant.
Add the chopped carrots, celery, zucchini, red bell pepper, Romanesco florets, red potatoes, and butternut squash to the pot. Cook for 5-7 minutes, stirring occasionally.
Pour in the diced tomatoes and vegetable broth. Add the dried herbs, onion and garlic powder, red pepper flakes (if using), salt, and black pepper. Bring the mixture to a boil.
Once boiling, reduce the heat to low, cover the pot, and let the stew simmer for 25-30 minutes, or until the vegetables are tender.
Stir in the chopped Lacinato kale and cook for an additional 5 minutes, until the kale is wilted.
Remove the pot from heat and stir in the fresh lemon juice. Adjust seasoning with salt and pepper as needed.
Serve the stew hot, accompanied by crusty bread if desired.
