What is Romanesco?
Romanesco, also known as Romanesco broccoli or Roman cauliflower, is a member of the Brassica family, which includes broccoli, cauliflower, and cabbage. Originating in Italy, this vegetable has been cultivated since the 16th century. Its flavor is often described as a milder, nuttier version of cauliflower, with a pleasing texture that holds up well to various cooking methods.
Culinary Uses and Cozy Winter Recipes

Ingredients:
1 head of Romanesco, cut into florets
2 tablespoons olive oil
2 cloves garlic, minced
Zest of 1 lemon
Shaved Parmesan or Parmigiano Reggiano
Salt and freshly ground black pepper to taste
Instructions:
Preheat your oven to 425°F (218°C).
In a large bowl, toss the Romanesco florets with olive oil, minced garlic, lemon zest, salt, and pepper.
Spread the florets on a baking sheet in a single layer.
Roast for 20-25 minutes, or until the florets are tender and lightly browned.
Serve warm, perhaps with a sprinkle of grated cheese for added richness.

1/2 cup heavy cream

Instructions:
In a large pot, heat the olive oil over medium heat.
Add the chopped onion and sauté until translucent, about 5 minutes.
Stir in the minced garlic and cook for an additional minute.
Add the Romanesco florets and broth to the pot. Bring to a boil, then reduce heat and simmer until the Romanesco is tender, approximately 15 minutes.
Using an immersion blender, puree the soup until smooth. Alternatively, carefully transfer the soup to a blender in batches and blend until smooth.
Return the soup to the pot (if using a blender), stir in the heavy cream, and season with salt and pepper to taste.
Heat through but avoid bringing it to a boil.
Serve hot, accompanied by crusty bread if desired.
